This cutting board was made by Echizen Yosegi, a company that breathes new life into wood that has been woven over many years in remote mountains and various places overseas.
It is made using the end grain method, which is considered the highest quality in Europe and the United States.
End grain refers to the cut surface of wood, and is made by taking advantage of the pattern and characteristics of the tree rings.
Its features are all good.
■ Knives last longer
While most cutting boards are made with wood fibers running horizontally, end-grain cutting boards have wood fibers running vertically, which makes them gentler on knives and helps them stay sharp for longer.
■ Hygienic
The cutting board is designed to be scratch-resistant, making it difficult for bacteria to enter. You can safely use it to cut bread that you will eat as is.

Mr. Itaru Tanabe, who runs a large carpentry business in Echizen City, Fukui Prefecture, started making chairs and accessories during the seasons when he was not working at the construction site, at the request of his wife. As he faced wood that he had previously discarded and breathed new life into it, he became absorbed in the process, saying, "It's surprisingly interesting."

■ Care instructions
-Do not use dishwashers or bleach.
- After use, wash and dry thoroughly indoors.
- Apply food-grade poaching wax or cooking oil periodically to create long-lasting water-repellent properties.
When you first start using it, it may have a smell that is unique to wood products. This will naturally fade as you use it, but if it bothers you, try washing it with lemon, vinegar, or baking soda paste.
・You can wash it with a sponge, but the grain of the wood will wear down if you wash it too many times. We can resand it for an additional fee, so please let us know.

■ About direct sunlight
As this product is made of natural wood and is unpainted, it may warp if exposed to direct sunlight. If this occurs, place the product with the concave side facing down on a flat surface and it will return to its original shape in about half a day.
